Lapis Surabaya Prunes
Lapis Surabaya is a light and airy layer cake originating from Surabaya, the capital city of East Java in Indonesia. In its hometown, the cake is commonly known as “Spikoe”. This cake was first introduced during the Dutch colonial period in Indonesia. Its moist and soft texture is inspired by Dutch cakes and uses local ingredients.
A classic Lapis Surabaya has three layers of chocolate and yellow sponge cakes. This variety is made with prunes.
